Preparations for the harvest start in October already. Nets are put under our 2141 olive trees to facilitate harvesting in nearly impassable terrain. The harvest takes place from December until May. Machines cannot be used due to the stones, the steep slopes and the sheer size of our tsounati trees. The tsounati olive are picked in ripe condition by hand. Since not all tsounati olives mature at the same time, we have to harvest each tree 10 to 15 times per season. The olives are then packed into sacks and carried on the farmhands´ shoulders to the nearest road. From there they are transported to the press and cold-pressed in the evening of the same day.
